Oatmeal Applesauce Cookies
This recipe for Oatmeal Applesauce Cookies was adapted from the Better Homes and Gardens Cook Book. I used to make them all of the time before we had to avoid most of the top 8 allergens. With a few subsitutions, however, they are still one of our favorite treats! Not only are they delicious but they are a relatively healthful treat. Enjoy! Ingredients:
1 tablespoon flax seed meal 3 tablespoons warm water 1/4 cup canola oil 2/3 cup firmly packed brown sugar 1/4 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 cup unsweetened applesauce 1-1/4 cup wheat-free all-purpose flour mix 1 teaspoon xanthan gum 1-1/4 cup old-fashioned oats 1/2 cup "safe" chocolate chips
Directions: 1) Preheat the oven to 375 degrees.
2) Combine the flaxseed meal and warm water in a small bowl; set aside. Beat together the oil and brown sugar until combined (mixture will not look creamy). Scrape the sides of the bowl. Add the baking soda and cinnamon and beat well. Scrape the sides of the bowl again. Add the applesauce and flaxseed meal mixture; beat until combined. Beat in the flour and xanthan gum until all of the flour is incorporated into the dough. Mix in the oats and chocolate chips.
3) Drop dough by rounded teaspoonfuls onto an ungreased cookie sheet. Bake at 375 for 8-10 minutes. Transfer to a cooling rack and cool. Makes about 2 dozen cookies.
