Certain meals are just not complete without a creamy coleslaw on the side. Things like pulled pork sandwiches are just not the same without it!
Both of my sons are allergic to eggs so going to the deli at the grocery store to buy some creamy cole slaw is not an option. These salads are made with mayonnaise which usually contains egg. Sometimes, these creamy salads have dairy ingredients as well.
To make the dressing egg free, the main substitute is the mayonnaise. When I first made this recipe, egg-free mayonnaise was not widely available and the texture left a little something to be desired. Luckily, egg-free mayo has come a long way and there are more options than ever!
Choose whichever mayo works for you and your allergies. If you can't find mayonnaise that works, you can substitute plain non-dairy yogurt for the dressing, too. I have also done a combination of both.
The dressing is sweetened a bit with either granulated sugar or honey. Use what you have on hand - either way, it is delicious!
This is the easy part - just buy a bag of coleslaw mix! If you really, really want to chop up cabbage and carrots, you can do that but I find that the bagged stuff is just as good and it saves me tons of time and effort.
I do like the cabbage chopped up a bit more than it is in the bag so I pour it onto my cutting board (in batches) and chop it up a little bit smaller. If you don't mind the longer pieces of cabbage, no need to go through that step.
For the apples, you can use whatever apples you have but I recommend a crunchy apple. I have used Granny Smith which is a little more tart than other apples. If you like a sweeter flavor, try Honey Crisp apples (they are soooo good!)
Finally, raisins are added for a little more sweetness. I love the raisins in this salad but if you or your family don't like raisins, you can leave them out.
This apple coleslaw tastes best after it has been chilled in the refrigerator for an hour or so.
We especially like it with pulled pork sandwiches! It's also a great side for those summer grill-outs.
Crunchy Apple Coleslaw
- 1 8 ounce package of shredded cole slaw mix
- 1 1/2 cups diced crunchy apple such as Granny Smith
- 1/4 cup seedless raisins
- 1/3 cup "safe" mayonnaise or "safe" plain yogurt
- 1-1/2 tablespoons Granulated sugar or honey
- 1 tablespoon vinegar
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- Combine shredded coleslaw mix, chopped apple, and raisins in a large bowl.
- In a separate bowl, mix together the yogurt/mayonnaise, honey/sugar, vinegar, salt, and pepper. Pour dressing mixture over coleslaw mixture and toss well to coat. Chill until ready to serve.
