This apple coleslaw is tangy, sweet, and crunchy and is a delicious picnic side! The dressing is made with vegan mayonnaise making this creamy salad free of dairy, eggs, soy, wheat/gluten, peanuts, tree nuts, fish, and shellfish.
This crunchy apple coleslaw is a little bit different than traditional coleslaw recipes. First, it includes apples (and raisins) which add sweet and tart flavors and give it a nice, crunchy texture.
Second, coleslaw dressing is typically made with mayonnaise which is off limits to egg allergy sufferers. Many coleslaw dressings contain dairy and soy as well. To make this recipe egg, dairy and soy free, I used just a couple of substitutes.
I made the dressing with egg free mayonnaise and dairy free yogurt which I find at our local specialty food store. You might decide to make the dressing with only a mayo substitute or only a yogurt substitute. Play around with it using the ingredients that work for you.

- 1 (16 ounce) package of shredded cole slaw mix
- 3 cups diced Granny Smith apple
- 1/3 cup seedless raisins
- 1/3 cup "safe" mayonnaise or "safe" plain yogurt
- 2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
Combine shredded coleslaw mix, apple and raisins in a large bowl. In a separate bowl, mix together the yogurt/mayonnaise, honey, salt and pepper. Pour dressing mixture over coleslaw mixture and toss well to coat. Chill until ready to serve.
