Crunchy Apple Coleslaw

This crunchy apple coleslaw is a little bit different than traditional coleslaw recipes. First, it includes apples (and raisins) which add sweet and tart flavors and give it a nice, crunchy texture.  

Second, coleslaw dressing is typically made with mayonnaise which is off limits to egg allergy sufferers.  Many coleslaw dressings contain dairy and soy as well. 

To make this recipe egg, dairy and soy free, I used just a couple of substitutes. 

I made the dressing with egg free mayonnaise  and dairy free yogurt  which I find at our local specialty food store.  You might decide to make the dressing with only a mayo substitute or only a yogurt substitute.  Play around with it using the ingredients that work for you.

Some meals are just made to be enjoyed with a side of coleslaw, especially during summertime. Give this one a try at your next cookout or picnic!


Crunchy Coleslaw Recipe
Dairy, egg, soy, wheat/gluten free

Ingredients:

1-16 oz. package of shredded cole slaw mix
3 c. diced Granny Smith apple
1/3 c. seedless raisins
1/3 c. plain "safe" yogurt (soy or coconut)
3 T. canola mayonnaise (such as Spectrum)
2 T. honey
1 tsp. salt
1 T. granulated sugar
1/2 tsp. pepper

Directions:

Combine shredded cole slaw mix, apple and raisins in a large bowl. In a separate bowl, mix together the yogurt, mayonnaise, honey, salt and pepper. Pour dressing mixture over cole slaw mixture and toss well to coat. Chill until ready to serve. Makes 6 cups (12 servings).
