Crunchy Apple Coleslaw

Some meals are just made to be enjoyed with a side of coleslaw, especially during summertime. Unfortunately, with an egg allergy, salads made with mayonnaise are out of the question. The solution? This Crunchy Apple Coleslaw recipe that was inspired by a recipe called "Waldorf Coleslaw". The substitute for mayonnaise in this recipe includes a blend of soy yogurt and canola based mayonnaise. If you have a soy allergy and can do dairy, you can use regular yogurt. In the peak of apple season, try another tart apple variety like Haralson.

Ingredients:

1-16 oz. package of shredded cole slaw mix
3 c. diced Granny Smith apple
1/3 c. seedless raisins
1/3 c. plain soy yogurt
3 T. canola mayonnaise (such as Spectrum)
2 T. honey
1 tsp. salt
1 T. granulated sugar
1/2 tsp. pepper

Directions:

Combine shredded cole slaw mix, apple and raisins in a large bowl. In a separate bowl, mix together the yogurt, mayonnaise, honey, salt and pepper. Pour dressing mixture over cole slaw mixture and toss well to coat. Chill until ready to serve. Makes 6 cups (12 servings).
