Hotdish is comfort food, perfect for supper on a chilly night. This recipe is free of dairy, egg, soy, wheat/gluten, peanuts, tree nuts, fish, and shellfish.

  • Cooking spray
  • 1 pound lean ground beef
  • 1 medium yellow onion chopped
  • 3 tablespoons "safe" margarine such as Earth Balance
  • 3 tablespoons all-purpose gluten free flour
  • 2 cups gluten free beef broth
  • 2 cups frozen mixed vegetables
  • 16 ounces frozen tater tots
  1. Spray a large glass casserole dish with cooking spray.
  2. In a skillet, brown the ground beef over medium high heat. Drain fat. Add the onion and saute until tender. Place this mixture in the casserole dish.
  3. In the skillet, melt 3 tablespoons margarine. Sprinkle the flour over it and whisk together for 1-2 minutes. Whisk in half of the broth. Allow mixture to bubble and thicken and add more broth until the mixture is the consistency of thick gravy.
  4. Pour mixture over beef mixture in casserole dish and mix together. Next, cover beef mixture with frozen mixed vegetables. Then, top with tator tots.
  5. Cover the casserole and bake at 375 degrees for 45 minutes. Remove the cover and bake an additional 15 minutes or until the tater tots are golden brown. Serve immediately.
