  • "safe" cooking spray
  • 1 (14) ounce package turkey kielbasa cut diagonally in 1/4 inch slices
  • 1 yellow onion chopped
  • 1 green bell pepper
  • 1 clove minced garlic
  • 2 (16) ounce cans dark red kidney beans, drained
  • 1 (14.5) ounce cans Italian style diced tomatoes
  • 1/2 teaspoon pepper
  • 1 cup water
  • 1/2 cup uncooked rice
  1. Spray a large frying pan with cooking spray. Cook the sausage on medium heat for about 5 minutes or until it is heated through. Stir in the onion, green pepper and garlic and saute until the onion is tender. Add the beans, can of tomatoes and pepper. Cook until heated through. Add the water and rice and stir. Bring mixture to a boil, reduce heat and simmer covered for 20 minutes.
