Chicken tortilla soup is quick and easy to prepare making it perfect for a busy night. It is free of dairy, egg, soy, wheat/gluten, peanut, tree nut, fish, and shellfish.

  • 4 cups wheat/gluten free chicken broth
  • 2 cups cooked chopped chicken
  • 1 15 oz can black beans
  • 1 cup frozen corn
  • 1 10 oz can tomatoes, petite cut
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  1. In a large stock pot combine corn, broth, chicken, beans, tomatoes and spices. Bring to a boil. Reduce heat and simmer for 15-20 minutes.
  2. Top with any of the following (optional ): diced avocado, fresh cilantro, diced fresh tomatoes, dairy free cheese, dairy free sour cream, tortilla chips .
