It is one of the very few soy cheeses that actually tastes good all alone. It can be cooked (where it just melts into a sauce) or used straight out of the jar. I use it in all kinds of recipes that call for goat, feta, Parmesan or Romano. I buy it in a local Middle Eastern grocery store, but I’ve seen for sale online, too. Vava is a brand from Macedonia, I think.
