Wheat-, peanut-, soy-free Chocolate Chip Cookies

To make wheat, peanut and soy free chocolate cookies I used the same 'ol Toll-House cookie recipe on the back of the chocolate chips using the following substitutions:


  1. Baker's brand chocolate chunks (not produced in a facility that works with nuts and soy-lecithin is "OK" per our doctor)

  2. Butter instead of shortening (we're not avoiding dairy)

  3. GARBANZO BEAN FLOUR (1:1 ratio) instead of wheat flour

  4. Added 1/2 tsp xanthan gum per cup of flour



No one could tell these we're the "real mc coy" and someone actually tried to take the cookie away from my son (in good conscience - thought it had wheat).

Editor's Note: If you're avoiding dairy, you could use "safe" chocolate chips (like Enjoy Life brand) and "safe" shortening or margarine. Thanks for the sharing, Anne!
