This is sooooo delicious.

My grand-daughter Ryleigh has many allergies. It is so hard to find things for her. One day we were fooling around in the kitchen and came up with this. Ryleigh calls it Grammy's Pretzel Chicken. I make it whenever I visit, it has been a hit.

This recipe is dairy, egg, peanut, tree nut, fish, shellfish free and can be made wheat/gluten free using GF pretzels.

Ingredients:
Skinless Chicken Breasts
Soy Milk
Pretzels (regular or gluten free)
Olive Oil
Salt & Pepper

Directions:
1) Heat skillet, add 1 tablespoon olive oil to pan. Turn down heat. Meanwhile take chicken, pound it down with meat mallet, soak in soy milk.

2) Put pretzels in small bag, crush with mallet, to make crunchy pieces. Transfer to plate.

3) Take chicken from soy milk, bread completely in pretzels, place in hot oil, add salt & pepper to taste. Saute til done.

Cooks in less than 20 minutes. You can make as many as you like, one meal or several.
