Nightshade Free Chili

This chili recipe is free from all of the common allergens AND it is free of Nightshades (tomato, potato, peppers, chilis, paprika, eggplant) another relatively common food allergen.

-1 can black beans
-1 can kidney beans
-2 cans chicken or broth (note: Progresso broth uses Green Peppers)
-2 tbsp canola oil
-1 small onion, chopped
-6 cloves of garlic, diced
-2 large carrots, chopped
-1 celery stalk, chopped
-1 tbsp turmeric
-1 tbsp cumin
-1/2 tsp ground clove
-1/2 tsp coriander
-salt & pepper to taste
-1 lb meat (we mix it up with a different meat every time. Beef sauteed in bite size pieces, roasted chicken or pork work great. We have also used Venison and ground turkey. Use whatever you have handy.

Saute veggies and meat in oil until onions and meat are slightly browned. Add all ingredients into a crockpot and cook on low 6-8 hours.

This is a tasty meal, though I didn't call it chili to avoid confusion. It is warm, mild, and almost sweet. I made it with homemade broth and dried beans.

To make homemade broth (avoiding nightshades, wheat, and preservatives), simply throw the carcass of a whole chicken (take most the meat off) in a crockpot. Add large pieces of onion, garlic, carrots, celery, or any other vegetable you have on hand. Fill the rest of the crockpot with water and add salt, pepper, and any herbs or spices you want (I use garlic, onion, bay, and sometimes basil). Cook on low overnight. In the morning, strain into a large bowl and discard the chunks. Voila! Chicken broth you can use or freeze!

Watch your broth - Progresso and College Inn both chicken and beef have soy in it. Harvest Garden is soy free,dairy free,gluten free and is very good.
